I regularly make many different variations of this recipe, this is a sesame version which is my favourite!
Ingredients
- 1-2 tbsp sesame oil
- 1 onion, chopped
- 2 cloves of garlic
- 1 tsp of garlic powder (for my garlic lovers)
- 1-2 tsp of curry powder (just for a little flavour, but mostly for colour, you could also use a small amount of turmeric)
- 1-2 tsp of salt and pepper
- 1 block of firm or extra firm tofu
- 1 tbsp sesame seeds
The rest are optional additions:
- Cilantro to taste
- Handful of mixed greens
- Avocado slices
- Tahini
- Hot sauce
Directions
- Pour sesame oil into a fry pan or skillet
- Add onion, garlic, garlic powder, curry powder, salt and pepper and cook until onion is translucent
- Crumble tofu into pan and add sesame seeds
- Cook until the tofu has dried slightly and is the firmness you prefer for your scramble
- Add cilantro in the last minute of cooking to slightly wilt
- Everything is ready to plate and enjoy 🙂
