Vegan Bacon Buddha Bowl

Ingredients

  • mixed greens
  • brown rice
    • soy sauce
    • 1-2 cloves of garlic per cup of rice
  • white kidney beans
  • avocado
  • cherry tomatoes 
  • spiralized/grated carrot
  • tempeh maple bacon (I used Tofukey’s Smokey Maple Bacon Tempeh) 
  • cilantro
  • salsa (I used a tomatillo based salsa as a sauce) 

Directions

  1. cook the garlic in the soy sauce for a few minutes before adding the water and following the cooking instructions for the rice
  2. brown the tempeh bacon on each side
  3. cook the kidney bean or use canned beans
  4. the rest is just plating everything! 

BUDDHA BOWLS ARE MY FAV, you can put anything in them (the more, the better in my opinion) and they always taste amazing and make me feel amazing!
