Dairy-free, Gluten-free Mac & Cheese
Ingredients
454 g green lentil macaroni (we used the brand Bentilia)
2 cups sweet potato, chopped
3/4 cup cashews, soaked in water for > 1 hour if you are not using a high speed blender
Juice of 1/2 of a lemon
1/2 cup nutritional yeast
1 tsp salt
1 tsp garlic powder
1/4 tsp black pepper
1/4 tsp paprika
1 tsp raw mustard
1 (400 mL) can coconut cream
Instructions
cook pasta according to package instructions
boil sweet potato until fork tender
add ingredients 2 to 11 into blender or food processor and blend until smooth. Add 1/4 cup of water if needed to help blend.
mix pasta and cheese sauce in a large bowl and enjoy!!
