Dairy-free, Gluten-free Mac & Cheese

Ingredients

  • 454 g green lentil macaroni (we used the brand Bentilia) 

  • 2 cups sweet potato, chopped

  • 3/4 cup cashews, soaked in water for > 1 hour if you are not using a high speed blender

  • Juice of 1/2 of a lemon

  • 1/2 cup nutritional yeast

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1/4 tsp black pepper

  • 1/4 tsp paprika

  • 1 tsp raw mustard

  • 1 (400 mL) can coconut cream

Instructions

  1. cook pasta according to package instructions

  2. boil sweet potato until fork tender

  3. add ingredients 2 to 11 into blender or food processor and blend until smooth. Add 1/4 cup of water if needed to help blend. 

  4. mix pasta and cheese sauce in a large bowl and enjoy!!
